I bought an ASUS GTX 260 OC video card and a little utility called Gamer OSD is included. All I have to do is press CTRL+ALT+S when flying and it records to a 720x480 wmv or DTX file with minimal impact on frame rates. I haven't done any tests but I would guess 3-4 fps, which is why you won't see any movies made around the denser sceneries, as a drop from 13 fps to 9 fps won't cut the mustard, whereas as drop from 22 fps to 18 fps is hardly noticeable.
