There are a lot of programs, like ActiveSky, Plan-G, FSCommander, Squawkbox, FSInn etc that will run across a network, and are ideal for putting onto a laptop. You need either SimConnect (requires FSX Deluxe Edition) or FSUIPC+WideFS (payware) to hook them up to FS though. I regularly run FS with all these sub-programs shunted off to my laptop, (and TeamSpeak, Skype etc), which also allows me to play on Vatsim with the aircraft sounds coming from the main PC and all the ATC chatter through the headset plugged in to my laptop.

If you want to use it to show flight deck gauges, you'd need a separate install of FS on the laptop, and a copy of FS-Wide (different to WideFS!), which is also payware, to synchronise it. There are lots of 'cockpit builder' type forums with information on doing this.
